Stuffed squid with spicy coconut sauce




About 7-9 medium sized squid


1.peel off the skin

2.carefully remove the inside (keep the body whole so you can stuff and cook without breaking)

3.carefully cut out the eye(dun let the purplish black liquid splatter out)

4.cut the tentacles short and remove the fangs (by pressing the tentacles.. hard/sharp like a fang will appear)

5.and also remove the soft bone and silver sac contain the ink

6. rub some salt on the squids and rinsed with running water and put on siever to toss off the water and put aside.


Stuffing ingrdients

100gm of minced prawn

1tablespoon of cilantro, chopped

1/2 teaspoon white pepper

In a bowl, mixed together minced prawn, cilantro, white pepper and some salt

Stuff in about 1-2 tablespoon (or abt 1/2 the size of the squid), of minced ingredients and

stuff in the squid tentacles and pook with a toothpick.. put aside




For the gravy

10 shallots

3 clove garlic

10 cili padi (if want to lesses spicy .. add in abt 8 cili padi)

1inch ginger

1inch galangal

1lemongrass

blender the above till fine


Method

1. Heat the frying pan and add in about 1 cup of cooking oil

2. Fry the stuffed squid till it is bloated up.

3. Remove and put aside.


or if you dun like to fry ... u can place squid into a steamer and steam for 10-15 minutes.


1. Heat the frying pan and add in 1/2cup cooking oil and fry the blender ingredients till crispy and frangrant.. add in 4 tablespoon of coconut milk and 1/2 cup of water let it simmer and add in some salt and the stuffed squids.
PS: dont forget to remove the toothpick when serving.... and you can cook with other sauce for example spicy sweet sour sauce or black pepper mushroom sauce .. :)
