Traditional Malay Lempeng(pancake)

Made  by my beloved mum ...

Im using this small size banana.. "pisang emas"
Peeled the bananas and mash till fine.

Add 1 cup or slightly more of grated white coconut
Add sugar to taste ..( approx 4tablespoon or more to your liking)
some salt (approx 1/2 teaspoon)
Mix all well.. and lastly break an egg(optional) and
add flour (approx 2 and 1/2cup or slightly more),


Heat the pan with a small flame.. and brush some oil on the pan .. add about 1 ladle full of pancake mixture, slightly spread to form a round shape.
Once the bottom have turn brown and cooked.. flip the pancake to the other side..till brown and done.


Serve this delicious pancake with a cup of Earl Grey Tea...  "smile and have a good day"

Pie Tee or Top Hats

Bought this Tee cups at Cold Storage...
fillings:
1 turnip cut or shredd in thin strips
Heat 2-3 tablespoon of oil and saute the 3cloves of garlic(pounded) and 5shallots(pounded).
Add 2 tablespoon of dried prawn(washed and pounded) and 1 tablespoon of fermented soya bean..optional (using strainer and washed and pounded)
Fry till fragrant.. add in shredded turnip and stir fry again and add a little water.
Simmer over low heat till cooked. Add salt to taste.
Put cooked turnip into a colander.

Topping:
make a thin omelette and roll it, slice thinly.
1cup of shrimps(boiled and shelled)
peeled cucumber shredd thinly
coriander leaf

Chillies Sauce:
20 fresh chillies(grind to a paste)
2 to 3 cloves garlic(pounded)
4 tablespoon of tomato sauce(ketchup)
some limes juice
some sugar
salt to taste


Fill the Tee cups with the turnip filling and add on with shredded cucumber and eggs.
Fill the top with cooked shrimp and coriander leaves.
Add about 1teaspoon of chillies sauce to the prawn... and
Enjoy!!


Ps: You can substitute chicken cubes or granules for dried prawn.
You can substitute cooked shredded chicken and cooked minced beef for the shrimps.

Kue Keria




500gm of sweet potatoes.. boil and mash .. add a little salt.. (mash like making mash potatoes.)
1 cup of plain flour


Method

1.Add the plain flour bit by bit while you mix well till it is form to a nice dough


2. Using a ice cream scoop for measurement... and form it like a ball and press it slightly flat and using the back of the wooden spoon to form a hole and a shape like a donut.... yeah!!


3.Heat the wok ... deep fry method... fry the donut till crispy and brown (do not put the fire on high, medium will do .. or else the donut will get burn easily)


4. Place the donut on the plate and sieve some icing sugar or homemade grind sugar on top....



PS: You can use the blender to grind the normal sugar.. sieve over the kue keria
if possible buy the light yellow colour sweet potato it is more firm.

Samosa




400gm of minced beef/lamb/chicken
1 big onion... cut into diced
2 cloves of garlic ... pounded finely
2 slices of ginger... pounded finely
1 teaspoon of cumin powder
1 teaspoon of fennel seed powder
salt to taste
Heat about 3 tablespoon of oil... saute the pounded ingredient till fragrant.
Add in the minced meat...
Add some salt...
Cook till the meat and the juice is almost dry up...
Add in the diced onion and cumin and fennel seed powder
Add in a dashed of crushed black pepper and white pepper.
Cook till the meat thorougly dried up
I use popiah skin...

Karipap Gulung

450g daging lembu di cincang halus
1 biji bawang besar
680g tepung gandum
2 butir telur ayam
4 lbs majerin, minyak sapi, sedikit baking powder, sedikit serbuk lada hitam dan air utk menguli tepung.

Cara nya
1. Ayak tepung bersama baking powder dan garam, kemudian gaulkan dengan majerin.

2. Bila rata.. masukkan telur dan gaul lagi untuk melembutkan tambahlah sedikit air.

Inti nya
1. Bawang besar di cincang halus dan gaulkan dengan daging cincang , masokkan sedikit garam dan serbuk lada hitam.

2. Pijarkan minyak sapi dan tumis daging dan masak sehingga empuk.

3. Canai pastri anggaran 1/4inch tebal dipotong 2-1/2 inch, isikan dengan inti daging di tengahnya ... sapukan sedikit air di keliling nya dan di tekan sedikit supaya tidak terbuka bila di bakar nanti.

untuk menyedapkan lagi taruh daun sop dan daun bawang.

bila sudah siap atur di tin pembakar dan sapu dengan kuning telur di atas nya dan bakar di dlm oven.
