Today Im cooking something simple, easy and fast to serve...
Normally i use whole chicken, but today im using chicken thigh. Spread some olive oil(EVOO), salt, black pepper and some nugmet powder all over the chicken and let it rest to marinate for 1/2 hour in fridge.
About 3 to 4 big onions cut in thin slices and mix it with little EVOO, salt and black pepper.
Spread the onion slices over the marinated chicken and cover the chicken with aluminium foil and bake in the oven for 20 minutes.
20 minutes later... scoop all the onions slices from the chicken ...put it in a bowl. Dapped the chicken with wholemeal wrap and spread the onion slices evenly on the wrap. Bake till crispy.
Same goes with chicken thigh ... sprinkle some cumin(optional) and more spices to your liking .. but for me.. i sprinkle some balsamic vinegar and tabasco sos Mmmm. Oven grill the chicken till crispy.
