Traditional Malay Lempeng(pancake)

Made  by my beloved mum ...

Im using this small size banana.. "pisang emas"
Peeled the bananas and mash till fine.

Add 1 cup or slightly more of grated white coconut
Add sugar to taste ..( approx 4tablespoon or more to your liking)
some salt (approx 1/2 teaspoon)
Mix all well.. and lastly break an egg(optional) and
add flour (approx 2 and 1/2cup or slightly more),


Heat the pan with a small flame.. and brush some oil on the pan .. add about 1 ladle full of pancake mixture, slightly spread to form a round shape.
Once the bottom have turn brown and cooked.. flip the pancake to the other side..till brown and done.


Serve this delicious pancake with a cup of Earl Grey Tea...  "smile and have a good day"
